The JUFA Hotel Annaberg – Bergerlebnis Resort lies in the picturesque Mostviertel region. Bröselpudding is a sweet and spicy regional speciality and is often served with afternoon coffee or with sweet ‘most’ (must) fruit wine.
Ingredients
140 grams sugar, 6 eggs 1/2 lemon/juiced, 110 grams breadcrumbs, 1 pinch cinnamon, 1/2 litre of most (must) fruit wine, 100 grams sugar, cinnamon bark, cloves, margarine to grease the mould.
Prepare and enjoy
Whisk the egg yolks, sugar and lemon zest until they become frothy. Beat the egg whites until stiff. Add alternate spoonfuls of the egg white mixture and spoonfuls of the breadcrumbs and a pinch of cinnamon to the egg yolk mixture. 2. Pour the mixture into a mould that has been greased and covered with a thin layer of breadcrumbs. Bake. 3. Gently heat the must fruit wine, sugar and spices. Just before you are ready to serve, pour this mixture over the pudding and allow to soak in for 5 to 10 minutes. 4. Best enjoyed with friends!
There are different ways to prepare this pudding. We have used half a litre of ‘most’ fruit wine in our version. Alternatively, you can use cloudy apple juice.
